FIBRILLAR COMPOSITION OF THE BACK MUSCLES IN NELLORE STEERS

Abstract

The produced bovine meat in Brazil is, in its bigger part proceeding from zebu animals (Bos indicus) and its crossings and innumerable efforts have been realized with the purpose to identify, in these animals, responsible genotypes for the expression of quality characteristics. Some characteristics of quality of the meat, as the softness, for example, it is believed that to be related with cellular characteristics of the muscular fibers that, in turn, can be related to the characteristics of ponderal performance. The genetic value of the characteristics is indicated by the DEP - Waited Difference of Lineage. The DEP is a trustworthy tool for identification of animals genetically superior and very used in the selection programs. Thus, the study of the cellular characteristics of muscular fibres for the longissimus thoracis and semitendinosus muscles, including number and type beyond the capacity and efficiency from transcription and translation table of contents will have to be realized in animals pertaining different groups of DEP for weight to the 18 months of age. The results will be able to allow an advance in the qualitative characterization of the meat of zebu. The objectives of this project are, therefore: (i)characterize histochemically the type of muscular fiber in different incisions of the special back; (II) Evaluate the effect of the genetic selection for weight to the eighteen months in the ratio of the different types of muscular fibers of special back incision of the carcass .
