Abstract

Pork is an important source of animal protein, ranking second in the list of the most consumed meats in the world. However, intensive animal production technology allows the emergence of infectious diseases. The use of probiotic microorganisms and their antimicrobial compounds, such as bacteriocins, has been considered an efficient alternative in the prevention and treatment of bacterial infections in the context of animal production. In this context, the present plan of activities aims to carry out the bioprospecting of bacteriocinogenic lactic acid bacteria (LAB) present in the intestinal microbiota of swine (Sus scrofa domesticus) and to evaluate the antimicrobial effect of these bacteriocins against pathogenic microorganisms of importance for pig farming. In the first stage of this project, the bioprospecting of lactic acid bacteria (LAB) that produce bacteriocins with antimicrobial effects against pathogens of relevance in swine farming was successfully achieved, as reported in the last report. For this new stage of the project, we propose the purification of the bacteriocins produced by these isolates.
