Abstract

Pork meat has a high nutritional value and is an important source of unsaturated fatty acids, such as oleic acid and linoleic acid, which have beneficial effects on human health and saturated as stearic and palmitic. Due to the importance of pigs both in the economic question and in the question of research as a model for scientific studies in humans, the species Sus scrofa is commonly used in different studies involving omic sciences. In the present experimental data from seventy-two Large White males, immunocastrated and homozygous-negative halothane (NN), slaughtered around 130 kg will be used. The animals were raised under four diets: basal with 1.5% degummed soybean oil, basal with 3% soybean oil, basal with 3% canola oil, and basal with 3% fish oil: oil from the crooked mouth sardines (Cetengraulis edentulus). After slaughter, tissue samples were collected for extraction and sequencing of mRNA. The present project aims to identify single nucleotide polymorphisms (SNP) present in coding regions of DNA, identified from the complete sequencing of the mRNA, and to associate them with the level of gene expression of the muscle and liver of swine fed with different sources of fatty acids.
