Abstract

Flavonoids are bioactive substances originating from the secondary metabolism of plants and fungi that promote a range of benefits to human health. Its chemical structure, formed by carbonyl and hydroxyl groups, allows these compounds to act as efficient complexing agents of metal ions. Metal-flavonoid (MFC) complexes have interesting characteristics that differ from free flavonoids, such as color and more pronounced antioxidant properties, which arouse scientific interest in potential applications of these components. Although there are spectrophotometric methods for the determination of flavonoids by complexing with aluminum ions, the procedure is not specific, and it may overestimate the existing quantity, in addition, chromatographic methods require efforts in the steps that precede the analysis. Therefore, the proposed project aims to develop a simple and low-cost analytical procedure for the determination of flavonoids (quercetin, rutin, morin and kaempferol) in fruit extracts, using berries (blackberry, raspberry, blueberry and strawberry) as model. The procedure will consist of the extraction of analytes assisted by microwave and double liquid-liquid partition at low temperature or by the addition of salts as forms of pre-concentration and removal of polar and non-polar interferents. The determination of flavonoids will occur by complexation with Fe(II) or Al(III) ions, with detection of the product formed based on photometry by digital images. The main analyticals characteristics will be determined and the accuracy compared with the reference procedure, based on high-performance liquid chromatography with spectrophotometric detection. The proposed procedure is expected to be a quicker, cleaner and less costly alternative for the determination of flavonoids in fruit extracts. (AU)
