Abstract

The jussara pulp derives from Euterpe edulis Mart. a palm tree is a typical Atlantic Forest, and its composition presents a high level of phenolic compounds, such as anthocyanins. The anthocyanins are natural pigment and provide a lot of biological effects to human health, including its antioxidant activity, being able to promote the prevention of chronic non-communicable diseases. On the other hand, this natural pigment class has low stability after extracted from the food matrix, besides low bioaccessibility and bioavailability to just a part of what is consumed is absorbed by the human organism. Even with promising results, the researchers developed until the present is not enough yet to guarantee the maximum effectiveness of this pigment biological action. Among the alternatives which may improve the anthocyanin's response, the incorporation of this compound into nanostructures is a highlight. The present project aims to verify the jussara pulp anthocyanins' biological effects after their incorporation into nanostructures through bioaccessibility and bioavailability analyzes utilizing Caco-2 cells. The determination of bioaccessibility after in vitro simulation and the anthocyanins quantification before and upon their incorporation into nanostructures, determinate by HPLC-PDA. Furthermore, their antioxidant activity will be evaluated. As a result, hopefully, the jussara pulp anthocyanins incorporation into nanostructures improve their bioavailability and antioxidant activity. (AU)
