Abstract

Breast milk is fundamental for the development of children, and when it is impossible for the child to receive breast milk, it is necessary to use infant formulas, which are made to provide the nutrients needed for each phase of childhood and to facilitate digestion. In this context, there is a frequent need to develop new formulations that contain functional appeal to meet scientific and technological demands. This project aims to evaluate the influence of the composition of model infant formulas on their behavior under the simulated conditions of the infant gastrointestinal tract. To achieve this objective, model infant formulas, produced with different types of proteins and oils, will be submitted to an in vitro dynamic gastrointestinal digestion system. During the digestion process the kinetics of lipolysis, the proteolysis and the structural disintegration of the samples will be evaluated. To perform that, analyses such as confocal laser scanning microscopy, droplet size distribution, free fatty acids by gas chromatography and SDS-PAGE electrophoresis will be conducted. Therefore, it is expected to understand the mechanisms of disintegration of these model infant formulas.
