Abstract

Staphylococcus sp are divided into two groups, according to the ability to produce coagulase, which can be either positive or negative. Both groups are known by their capacity to produce enterotoxins that are responsible for most food poisoning cases in humans. In Brazil, S. aureus are among the three main disease-causing agents transmitted by food. However, it has been noticed in Coagulase-Negative Staphylococcus (CoNS) a great potential to produce enterotoxins. In addition to the production of enterotoxins, some species of CoNS are resistant to many types of antibiotics, being able to transfer their resistance genes to others microorganisms, what turns the topic into a Public Health Problem. The project has as objective to identify and to characterize CoNS, previously isolated from dairies in São Paulo State. Eighty-five strains isolated from Minas Frescal cheese production chain will be used. The project aims to identify species of CoNS by sequencing the gene sodA and BLAST analyze. The strains identified will be submitted to a detection of genes which are responsible for classical enterotoxins production, and the meticillin-resistant genes (mecA and mecC). In addition, the resistance profile to antibiotics (penicillin, oxacillin, cefoxitin, gentamicin, trobamycin, tetracycline, clindamycin, chloramphenicol) will be performed. (AU)
