Despite its proved health benefits, phytochemical compounds as tocols, polyunsaturated fatty acids, phytosterols and then some, are still not very much explored through safety extraction methods for further application in food, cosmetics or pharmaceutical industry. Fractionation and extraction process that uses supercritical CO2 (SC-CO2) has great potential to replace common processes because of the use of a safety and easily removed the solvent. SC-CO2 uses to obtain bioactive compounds from fruit waste are still less investigated in the literature compared to plant extracts. The fractionation of compounds using supercritical technology and decreasing the pressure has the advantage of online separation with no need to use co-solvents once that technology modifies thermodynamic properties of the solvent by simple variations in temperature and pressure, allowing, for instance, the separation of compounds with unlike molecular mass and polarity. The aim of this work is to explore different separation process conditions to purify bioactive compounds from passion fruit by-product in order to turn a waste from food industry into a valuable product. A separation unit will be built with two separators inline that will operate together with an already existent extraction unit located in the Laboratory of High Pressure in Food Engineering (LAPEA) at University of Campinas - UNICAMP. The analysis will be performed to characterize minor compounds of interest that are present in the by-products (tocols, phytosterols and unsaturated fatty acids) and products concentrated in these compounds should be obtained. An economic evaluation of the process will be made by means of an estimative of manufacture costs of the fractions. (AU)
