Abstract

Betalains are plant pigments with antioxidant properties found in some species of fluorescent flowers. Coumarin Betalains (cBeets) and Carbostyril Betalains (csBeets) are artificial derivatives, developed in the research group to be used as fluorescent probes in cell biology applications. Data obtained with imine and iminium derivates of phenylbetalaines suggest that N-methylated aromatic betalains are more stable over hydrolysis when compared to non-methylated derivatives. In this master project, it is proposed to semi-synthesize N-methylated derivatives of cBeets and csBeets and determine the effect of this change on hydrolytic stability as photophysical properties of these compounds compared to the non-alkylated compounds. The results will contribute in establishing relationships between the structure of the betalains and its photophysical properties. (AU)
