Fortification of calcium in foods is intended to maintain, correct or prevent nutritional deficiencies in the specific population or group (such as the elderly, pregnant women and children), the development of procedures to evaluate shelf life and nutrient metabolism enriched in the human body are key contributions to the health and food sciences, especially in developing countries. The objective of this work is to develop a sensitive and accurate analytical method that allows the determination of 42Ca, 44Ca and 46Ca isotopes via CaF or CaI molecules by high resolution continuum source of molecular absorption spectrometry in fortified foods, serum and urine. For this, the isotopic shifts of the molecules will be evaluated, as well as the optimum instrumentation parameters: pyrolysis and vaporization curves, sample mass, amount of molecule-forming reagents and chemical modifier. This project is expected to contribute to fortification nutritional studies. It will be an innovative study, since procedures of isotopic measurements of metals via molecules by HR-CS MAS have not yet been reported.
