Real physical systems are always subject to interactions with the environment and therefore must be viewed as open systems. In the usual approaches, this situation is modeled by assuming that the system of interest is coupled linearly to a reservoir consisting of a large number of independent harmonic oscillators. Many interesting results come from this approach that applies to a large number of physical situations where no control is possible over the reservoir. However, in recent decades, experimental control over various quantum systems (trapped ions, quantum gases, superconducting circuits, etc.) is increasing, such that it is possible to think of the development of controlled environments or reservoirs for an open dynamics with particular properties. The objective of this work is to develop microscopic models of reservoirs from experimentally controllable interactions. The applications of this type of study are varied. One can, for example, think of reservoir engineering with a view to the preparation of specific quantum states as an asymptotic state of open dynamics. Another possibility is to extend the current studies of out of equilibrium Statistical Physics, usually performed with the use of simple thermal reservoirs, for these new models of reservoirs that will be developed in this doctorate. It is hoped, therefore, that experimentally open experimental dynamical models can be developed for applications in diverse areas such as quantum optics and quantum information, Atomic Physics and Statistical Physics.
