Abstract

Nanoparticles are carrier systems for organic compounds, which are considered promising for facilitating the bioavailability of these compounds in pharmaceutical forms, being used as a strategy to increase safety, efficacy and stability. Bromelain, in turn, is a protein found in pineapple (Bromeliaceae family), which has proteolytic, healing, anti-cancer, and anti-inflammatory activities, among others, being used in the pharmaceutical, food and textile industries. Bromelain encapsulation in order to improve its stability in pharmaceutical products is still unclear, so this project aims to study the stability of encapsulated bromelain under stress conditions, as well as the comparison of these with chitosan nanoparticles.
