The soluble coffee industry is responsible for generation of large quantities of organic waste such as spent coffee grounds, which can be reused as raw material for production of ethanol, biodiesel and high value added, such as phenolic compounds .For both extraction of phenolic compounds as oil, from different plant sources, extraction with supercritical carbon dioxide(scCO2) is used successfully. On the other hand, it is known that the solubility of these components in scCO2 increases with the use of ethanol as cosolvent. This project aims to study the extraction and fractionation of coffee oil using supercritical technology. Different solvents will be tested in the extraction : scCo2, ethanol and mixtures of scCO2 + ethanol. Fractionation of the compounds present in spent coffee grounds will be made in a sequence of separators which density will be modified from stage to stage using supercritical carbon dioxide as solvent or as antisolvent (in presence of ethanol). All the obtained fractios will be analised for extraction yield, composition of free fatty acids, content of total phenolic compounds and antioxidant activity. It is expected in this project identify the best operating conditions of fractionation, using the supercritical carbon dioxide as solvent or antisolvent, comparing the obtained fractions with the commercial green coffe oil and with the extracts obtained at low pressure.
