Abstract

Nanoparticles are carrier systems of organic compounds, such as bromelain, promising for facilitating the bioavailability of these compounds in pharmaceuticals. Bromelain is a protein found in pineapple steam and fruit (from Bromeliaceae family), which has proteolytic, healing, anticancer, anti-inflammatory, among others properties, being widely used in drug, food and textile industry. The nanoencapsulation of bromelain in order to improve its stability and release in pharmaceuticals is still poorly understood. This project aims to study the stability and release of bromelain by nanoparticles made of chitosan. As well as compared its stability to free bromelain and empty chitosan nanoparticles stabilities.
