Abstract

Differently to enamel, dentin demineralization results in exposure of an outer layer of organic matrix demineralized, which if it preserved, can serve as a barrier against subsequent erosion challenges diffuser. Euterpe olaracea Mart. (açai extract), a natural extract rich in polyphenols have an antioxidant and anti-inflammatory effect as well because it's the action of catechins and epicatechin, can have an inhibitory effect on matrix metalloproteinases (MMPs) present on dentin and also in saliva. The MMPs are enzymes responsible for the degradation of collagen-rich components, therefore, a potential protector against erosion, challenges by the preservation of the collagen layer. The aim of this study will be to analyze the effect of açaí-berry on inhibition activity of MMP-2 and MMP-9. MMP-2 and -9 activities will be analyzed zymographically in incubation buffers containing açaí-berry in concentrations ranging able to inhibit up to 100% of gelatin activities.
