Abstract

The antioxidants added to the diets of farmed fish to prevent the rancidity may act the same way on the animals´ flesh. The synthetic antioxidants are the most frequently used for that purpose, although some of them may exhibit toxicity and, therefore, find restriction in some countries, a matter that stimulates the search for alternative sources of antioxidants. In view of this, this research project proposes the utilization of microbial biomass with antioxidant properties for the rearing of fish, which means a way of utilizing byproducts from the biotechnology industry, so diminishing costs with disposal and avoiding environmental harm due to inappropriate discard. The aim of this project is to investigate whether the use of microbial biomass influences the fish performance and health and the meat quality. Tilapia fish juveniles will the allotted in 24 farming tanks linked to each other to form a closed system of water recirculation and forced aeration. A totally randomized experimental design using a factorial scheme 3 x 3 + 1 (3 types of biomass; 3 concentrations of the biomass in the diets; 1 positive control) of 8 treatments/ 3 replicates will be adopted. The experimental diets will be supplied ad libitum thrice a day during 100 days and the water quality parameters will be monitored weekly. At the end of the experiment, fish will be stunned for blood collection, slaughtering, evisceration and filleting. The livers will follow for the determination of the hepatosomatic index and the fillets will be analyzed regarding to color, texture, proximate composition, carotenoids, lipid oxidation and fatty acids. Results will be analyzed by ANOVA and the means will be compared by Tukey`s test at 5% significance. Surface response will be used to represent the regression analysis of the variables evaluated along the time. (AU)
