Abstract

Vitamin B12, or Cyanocobalamin, is a water-soluble substance produced by some microorganisms. It occurs in small amounts primarily in animal food and some leguminous plant. The low concentration of vitamin B12 and its presence in just a few natural food varieties cause some impacts in the appropriate human consumption of vitamin B12 and its absence in our metabolism affects the vital red blood cells production and several activities of the neurological system. The purpose of this research project is to produce solid lipid microparticles containing vitamin B12 using the spray chilling technique. The morphological and physical-chemical characteristics of the microparticles will be evaluated for quality verification and stability of vitamin B12 atomized using vegetable fat as a carrier agent.
