Currently the number of companies that are adopting the model of Lean Production, which focuses on the elimination and minimization of costs in its operations is growing at a fast pace, bringing with it a significant increase in academic articles relating the subject. However a very important element for the global economy that has been little discussed in these publications, is agribusiness. Therefore the aim of this research is to evaluate the existing publications on system Lean Production applied in the segment of agribusiness. To fulfill this objective, is so fans in other four specific objectives: (I) detect the scientific publications that relate the term Lean Production associated to food chains; (II) classify them and identify them; (III) analyze such works by means of tables one-dimensional and multi-dimensional, graphs and maps; and (V) indicate future opportunities for research. This research presents a theoretical nature and of an exploratory-descriptive characteristics. In order to attend the objectives will be employed the technique of Bibliographic Review Systemic, that has as characteristic have a quantitative approach. It is expected in the end generate theories on the subject, which lacks studies, through publication in scientific events and journals, as well as view the conduct of new researches.
