Abstract

The yeast Saccharomyces cerevisiea is considered an important raw material for animal nutrition because of their prebiotic capacity. Prebiotics are compounds, which are indigestible by the animal's body but are fermented by microorganisms in the gastrointestinal tract, providing benefits to the host. In the industrial process, the brewery yeast has the ability to metabolize the constituents of the must, rich in fermentable sugars. The fermentation depends on factors such as the substrate used for growth, fermentation method, method and condition of drying and age of the cells. Therefore, the modern production processes have aimed the production of yeast with high potential prebiotic. Will be used 18 adult cats, mean age 3.0 ± 0.5 years, male and female, without defined breed and healthy. The animals will be used in a completely randomized design, consisting of three experimental treatments, called: CD (control diet), YSC 0.3 (control diet with 0.3% yeast with active metabolites) and YSC 0.6 (control diet 0.6% of yeast with active metabolites). The results will be analyzed using the computer program Statistical Analysis System (SAS Institute Inc., 2004) and according to the data distribution, parametric statistical tests or nonparametric will be employed.
