Abstract

Brazil has emerged as one of the world's leading producers of fruit, presenting a wide variety of biomes, among which stands out the Atlantic Forest, which houses a variety of fruit species, however, these species are not commercially grown. In order to knowledge about these fruits, the characterization of the fruit has attracted the interest of the scientific community along with the quantification of bioactive components, because they are important for the understanding of its nutritional value and its functional properties. The aim of this project is to evaluate fruits of different species as the quality and functional properties. The project will be developed in the Postharvest Laboratory of Horticultural Products, Crop Science Department, ESALQ-USP in Piracicaba, in collaboration with the Laboratory of Biochemistry and Instrumental Analysis (LAN-ESALQ) and Laboratories of the Faculty of Pharmaceutical Sciences, USP, in São Paulo. The fruits are to be studied cambucá (Plinia edulis (O.Berg) Nied), guamirim cereja (Eugenia florida DC), jabuticaba pêndula (Myrciaria trunciflora O.Berg) and uvaia dura (Eugenia pyriformis Cambess), which will be harvested from particularly property in the municipality of Rio Claro-SP, in two consecutive years. The project will consist of physical, chemical, chemical composition, bioactive, phenolic compounds, antioxidant activity and profile of volatile compounds. The design will completely randomized with five replications of 10 fruits for each species and year of assessment. The results will be submitted to the analysis of variance and the means are compared by Tukey test (5%). It is hoped that this project to evaluate the potential of natives fruits of the Atlantic Forest for fresh consumption and/or industrialization. (AU)
