Fatty acids play essential roles for all forms of life, among them stand out polyunsaturated (PUFA) fatty acids known as omega 3 and omega 6, which are not produced by the human body, but present brain function and transmission nerve impulse keeps the normal cells, among other functions. So are widely used in food industries as inputs and are also sold as a dietary supplement. Currently studies the production of omega 3:06 by enzymatic catalysis using as the starting vegetable oils and fish material. This project aims to produce polyunsaturated fatty acids from triglycerides present in the oils of soybeans, canola and fish using as a catalyst for the hydrolysis reaction the lipase produced by the fungus Fusarium verticillioides. Nutrient solutions will be tested during the solid state fermentation to optimize the production of lipase, and hydrolytic activity is measured by the hydrolysis of the chromogenic substrate p-nitrophenyl palmitate and olive oil. Also, the biochemical characterization of the lipase produced by this fungal strain and then the PUFA production and analysis will be carried out will be performed. (AU)
