Abstract

Seeking the recovery of products with high added value, such as bromelain, from the waste from its plant (leaves and stems) and processing (bark and stem), several researches have been developed. These enzymes play important physiological roles, offering a wide range of proven therapeutic applications (anti-inflammatory, anti-tumor, adjuvant healing; increase in cardiorespiratory fitness, etc.), And are used by the food industry in meat processing. Bromelain is the generic name given to the set of derived endopeptidases belonging to members of the Bromeliaceae family. The aqueous two-phase systems, polymer-polymer or polymer-salt has been widely used for separating and purifying macromolecules. Thus, the modeling of the partition of molecules of interest is required in the processes of separation and purification. The methods commonly used to obtain the partition coefficient of biomolecules models are based on thermodynamic composition location using parameters obtained from these coefficients of experimental data or by using empirical correlation. Alternatively, artificial neural networks have been recently used to correlate and predict the thermodynamic properties of aqueous solutions. Thus, the artificial neural network model will be used in this design to shape the partition coefficient, purification factor and yield of bromelain purification using aqueous two-phase systems PEG / ammonium sulphate.
