Abstract

Salmonella spp. are considered the main responsible for outbreaks of food poisoning in humans, involving all kinds of food as a vehicle, and the most prominent are the consumption of poultry products and their derivatives. Therefore, the presence of biofilm-forming microorganisms in the food industry, such as Salmonella spp. represent a serious concerning to public health. The flaws in the process of cleaning allow residues adhesion on the equipment and surfaces favor the formation of biofilms. Once established, are difficult to identify and remove, presenting resistance against antimicrobials used in conventional cleaning procedures, besides damaging equipment and slaughterhouse facilities. In this context, new research is being conducted in order to create effective alternatives for reducing the contamination of facilities and consequently the final product. The use of bacteriophage is a viable alternative to commercial application, because it has no residual risks and have high specificity, while maintaining the quality of the final product. Laboratory testing in vitro and in vivo demonstrate that bacteriophages have significant results in controlling bacteria, making the researching of his action in biofilms a safe and innovative possibility for the control of biofilms of Salmonella spp. (AU)
