Abstract

The ethanolic fermentation is a phenomenum by which the sugars are transformed into ethanol and carbonic dioxide, mainly by the action of yeasts from the species Saccharomyces cerevisiae. Many ways of conducting the fermentation are known. The biological reactor may be operated by descontinuous, fed-batch, semi-continuous or continuous manner, with our without cell recycle. The must may be composed of sugar cane juice or molasses. One of the main concerns in the sugar and alcohol industry is to fight the contaminant microorganisms, represented by bacteria and yeasts that install in the process causing decrease in the ethanol yield. Studies aiming the consortiated effect of bacteria and native yeasts on the fermentation have been scarcely found. This work aims to evaluate the effect of native S. cerevisiae yeasts with rugous colonies and pseudohyphal morphology and bacteria on the fermentation yield of a process conducted by the selected yeast strain PE-02, looking for conditions that minimize the effect of the contaminations. The fermentation system, substrate and cell treatment will be evaluated, searching to understant the role of each microorganism (bacteria, native yeast, selected yeast) during the process.
