Abstract

The main objective of this project is to produce starch corn enriched with quercetin, a hydrophobic flavonoid. First, the quercetin will be encapsulated in liposomes by the ethanol injection method, and they will be lyophilized. The important parameters of the ethanol injection method have to be studied, and also the lyophilization strategy. The dispersed and lyophilized formulations will have their shelf-lives evaluated. After this first step, the lyophilized liposomes will be added to the corn starch by agglomeration, using a pulsed fluidized bed. The purpose is to produce an enriched food powder able to be, in future studies, incorporated in different types of food formulations (solid, semi-solid or liquid). The enriched powder will be physico-chemically characterized and it will have its shelf-life evaluated.
