Abstract

The chilling injuries and post-harvest deterioration have been considered as the main sources of post-harvest losses of fruits and vegetables. When present significantly reduce product acceptance in the market. Peach cv. Douradão is considered very sensitive to cold storage, with a high degree of sensitivity to chilling injuries. The goal of this project is to verify the effect of ethylene and 1-MCP at different periods of cold storage and its association with the use of modified atmosphere on the incidence of injuries caused by cold and aspects of fruit quality in order to select simple methods which together with the cooling resulting in the prolongation of the storage period and ensure quality. The fruits are stored for 30 days at 1 ° C and 85-90% RH and after this period will be for 3 days at room temperature, for simulation of time of commercialization. The parameters are: incidence of CI, decay, weight loss, skin color and firmness. Also be certain some physiological and biochemical fruit such as respiration rate, ethylene production, levels of total and soluble pectin and pectin enzyme activity. (AU)
