The biotechnology offers many alternatives in the search of technologies using agroindustrial waste as feedstock for the production of several biomolecules. The production of enzymes can be made by these residues making the process more economical and contribute to reduction of environmental impact. Amylases belong to the class of hydrolases and constitute one of the most important groups of industrial enzymes because of its wide spectrum of applications in industries such as food, detergents and cleaning products, paper and cellulose, textile, chemical and pharmaceutical, clinical analysis, and others. The solid state fermentation (SSF) is an important alternative to submerged fermentation (SmF), since it uses low cost substrates, assures saving water and energy and the biocatalyst can be produced in more concentrated form, thus facilitating its recovery. This work aims to improve the technology of amylase production by the SSF culture of Rhizopus microsporus var. oligosporus with wheat bran and varying the addition of salts, moisture, temperature and time. The enzyme produced will be concentrated by ammonium sulphate and determined the best conditions for amylase activity and stability at different pHs and temperatures. The enzyme obtained will be used to the production of glucose syrup from wheat flour and bran.
