This project aims to explore and expand the possibilities of chemometrics applied to the comprehensive two-dimensional gas chromatography with solid phase microextraction and detection by mass spectrometry for studies related to quality of cocoa, cupuaçu and derivatives. Exploratory studies will be conducted using chemometric tools for multidimensional pattern recognition for evaluation of the types of cocoa and recognition of potential markers of quality. Also, it is intended to use multidimensional multivariate calibration methods for studies of correlations between results obtained by Quantitative Descriptive Analysis and GCxGC-qMS. Finally, exploratory studies will be conducted using chemometric tools for multidimensional pattern recognition for the quality assessment of cupuaçu. It is hoped that the results of this thesis provide support to increase the knowledge about the volatiles in cocoa, cupuaçu and derivatives and their relationship to type and quality of the sample.
