Goat milk is a very important product for the economy and nutrition of many countries. The high nutritional value and physico-chemical characteristics of this product make its dairy products like cheese, have a high added value. Most fermented products are produced by the use of lactic acid bacteria, which have many benefic properties, including the ability to produce vitamins. Vitamins are essential micronutrients for the metabolism of living beings. The B group vitamins such as riboflavin and folate, are involved in important functions in the metabolism, for example, the synthesis of nucleotides and enzymes. Deficiencies of folate and riboflavin affect the population of many countries and may be associated with deformities of the neural tube, Alzheimer's, heart diseases, cheilosis, glossitis among others. Many worldwide countries have prevented these deficiencies by adopting laws that require supplementation with these vitamins in some products. Therefore, this research project aims to isolate lactic acid bacteria that produce B vitamins from milk and goat cheeses, analyze them for their potential production of folate and riboflavin, identify them by using phenotypic and molecular techniques, and assess the potential application of these bacteria in the production of bioenriched goat dairy products.
