The solid waste generation by agro-industrial activities, especially in Brazil with its economy heavily based on agribusiness, has created a demand for economically viable technologies and reuse of these materials. Is believed that the reuse will result in the consequent reduction of the impact of disposal of these wastes to the environment, and to reinsert them in the industry, in increasing the efficiency of industrial production chain, being also crucial for the sustainability of agro-industrial activity. Allied to this, the growing demand of the consumer market for natural products linked to the evidence on the possible toxicity of synthetic antioxidants increase research on natural products. Thus, the objective of this study will evaluate the bioactive and technological potential of agro-industrial residues as sources of antioxidant compounds for food and beverage industries. For this will be examined winery residues (pomace and stems), agro-industrial residues from industries producing frozen fruit pulps (caja, cupuaçu, soursop and umbu) and from processing of coffee. First, will be analyzed the chemical composition and screening based on the antioxidant activity of hydroalcoholic extracts of these residues. The residue(s) with greater antioxidant power follow for bio-guided isolating. Extract the residue, fractions and isolated compounds will be applied in soybean and linseed oils and its effectiveness as an antioxidant in the lipid matrix will be compared to synthetic antioxidants. From the information generated is expected to create subsidies to rehabilitate the agro-industrial by-products across of bioactive extracts or by extraction of natural antioxidants for use by pharmaceutical and/or food industries.
