Abstract

This study has an objective to describe the usual diet during adulthood among patients with oral and oropharyngeal cancer and to compare the information with the usual diet of patients without cancer. A hospital-based case-control study will be performed. The case group will be composed of new cases of patients with oral and oropharyngeal cancer undergoing treatment in two cancer reference units in São Paulo: Heliópolis Hospital and A. C. Camargo Hospital. The Control group will be composed of patients in the same hospitals, without cancer, paired as per sex, age, and tobacco consumption. A food frequency questionnaire will access dietary patterns that are most usual in the Brazilian diet and also their ways of preparation. The dietary intake frequency of each food will be stratified according to quartiles of distribution among case group patients. Conditional logistic regression will perform the comparative analysis of the highest and the lowest levels of habitual intake among cases and controls; associative measures such as Odds Ratios and their confidence intervals (95%) will be used. Multivariate models will be performed in order to identify the foods or the food groups that are associated with an increase or a reduction of the chance (Odds) of having oral and oropharyngeal cancer.(AU)
