Abstract

Obesity may be partly responsible for increased oxidative stress and consequent dysregulation of the expression of proinflammatory adipokines in different cell tissues, which can trigger diseases related to metabolic syndrome. However, the mechanisms by which fat accumulation to such deregulation directs the synthesis and secretion of adipokines, need to be further investigated. Functional foods with bioactive properties can play an important role in helping to combat obesity. These properties, in food systems, are capable of reducing the risks for diseases and improve the physiological responses positively modulating the inflammatory pathways. The initial proposal of this project is the use of whey proteins separated by complex coacervation method with biopolymers. This is part of the development of fractionation technique, modification and maintenance of the whey proteins, and generation of new functional products. It is necessary to understand the possible alterations involved in coacervado supplementation on pro-inflammatory processes triggered by obesity. Few scientific studies have been conducted to date justifies the realization of this experimental study, with the purpose of deepening scientific parameters in obesity prevention and therapeutic products employing new coacervado of whey proteins.
