The aim of this study is to evaluate the effect of feeding restriction in appetite-regulation hormones (ghrelin and leptin), on the subsequent ingestion, metabolism and perception of obese women, comparing the use of a fiber-rich, high satiety diet, with a conventional diet. In the beginning of the study 40 women with BMI greater than 30 kg/m2, weighting 120 kg, and aged between 20 and 45 years, will be selected, and will be divided into experimental group (high-fiber diet) and control group (conventional diet). This experimental study will consist of three phases: I (diagnosis - usual food intake - two days of ad libitum diet), II (food restriction - seven days in the 1000 kcal feeding pattern) and III (post-restraint - two days of ad libitum diet to evaluate food intake in the period after food restriction). Participants will be evaluated in four stages: in T1 anthropometric evaluation will be performed; in T2, Phase I food intake will be calculated and anthropometric, body composition and calorimetric evaluations will be carried out, as well as biochemical including appetite-regulating hormones analysis; in T3 anthropometric, body composition and calorimetric evaluations, biochemical analysis with appetite-regulating hormones dosage will be once again performed; and in T4, anthropometric measurements, biochemical including appetite-regulating hormones analysis and calculation of dietary intake of Phase III will be performed. During the food restriction period (phase II), the hunger and satiety scale will be applied and food restriction perception experience will be evaluated through analysis of the contents in descriptions made in a register book, during the period of hospitalization.
