Abstract

New the interest to evaluate the conservation potential after-harvest of cultivating of tangerinas, associating temperatures of storage and controlled atmosphere, as well as its use for minimum processing made with that this work was planned, in which will be evaluated, beyond the quality parameters, other on parameters to the nutricional value of the same ones. Tangerinas `Ponkan', `Satsuma produced Okitsu' and `Fremont' in the Experimental Station of Citricultura de Bebedouro will be stored under different temperatures (3°C and 7°C) and in different concentrations of O2 and Co2 (air with 5% Co2; 10% O2 + 5% Co2). The fruits of these varieties also will be used for the production of products minimum processings, where the use of different packings will be tested (polystyrene coated with chloride film of polivinila-PVC; rigid polyethylene trays tereftalato-PET with covers) storage 5°C. The fruits will be analyzed to each 7 days (0 or initial, 7, 14, 21, 28, 35 and 42 days) and the products minimum processed to each 3 days (0 or initial, 3, 6, 9, 12 and 15 days) how much of loss of cool mass, coloration, appearance, income in juice, respiratory activity, composition of the atmosphere in the interior of the packings, acceptance for the consumers, texts of titulável acidity (AT), soluble solids (SS), acid ascórbico, clorofila of total and soluble the rind, soluble pectinas, carboidratos, and total polifenóis thus with relation SS/AT will be calculated and the total antirust activity will be determined.
