Antimicrobial films appear as a response to the search for more competitive and aggregated value packaging. With the aim of developing packages that, besides active are also biodegradable, this work proposes to study the effect of antimicrobial additives (cinnamon powder, clove powder and orange essential oil) on the characterization of cassava starch biobased films. The bioflims will be characterized through their physical-chemical properties (optical properties, equilibrium humidity content, water activity, thickness and water solubility), mechanical properties (tensile strength, elongation at break percentage and elasticity modulus), glass transition temperature, permeability (to water vapor and to oxygen) and microstructure. After the characterization, the antimicrobial activity will be tested in baked products with typical microorganisms. Base films will be prepared with cassava starch, sucrose, inverted sugar, glycerol and ethanol, in amounts defined in previous results. A cassava starch film containing only sucrose, inverted sugar, glycerol and ethanol will be used as control. This project pertains to the FAPESP research aid (n. 2005/51038-1) "Biodegradable active packaging based on cassava starch and natural edible additives: development, characterization and effective evaluation " underway at the Food Engineering Laboratory of the Department of Chemical Engineering of the Polytechnic School of the University of São Paulo.
