Alternative non invasive systems for measurement of internal fruits quality

Abstract

The main goal of this research is to evaluate magnetic resonance technique as an alternative method for assessing fruit internal quality and also of the juice, comparing to spectroscopy. Thus, we will evaluate the noninvasive technique of nuclear magnetic resonance in low field for determining the internal quality of whole fruits, using the orange as a model, comparing the noninvasive technique of spectroscopy in the near infrared - NIR. As will be evaluated invasive techniques in high field NMR spectroscopy and mid-infrared - MIR for analysis of the quality and profile of natural orange juice. Comparison will be performed correlations between measures with instrumental analyzes quality physicochemical and sensory, setting the feasibility of building a system of quality control for commercial applications using these alternative systems.
