This proposal aims at the development of the Research project “Prospecting for vitamin-producing lactic acid bacteria in artisanal products from Argentina and Brasil for design of folate enriched foods", with the joint participation of researchers from the Faculty of Pharmaceutical Sciences, University of São Paulo (USP), São Paulo, Brazil, the Reference Center for Lactobacilli (CERELA), San Miguel de Tucumán, Argentina and the Universidad Nacional de Tucumán (UNT), San Miguel de Tucumán, Argentina. Vitamins from the B group are found in many foods but their consumption by the majority of the population is unsufficient to meet the recommended daily requirements. Certain strains of lactic acid bacteria have the ability to synthesize these vitamins, in a strain-dependent manner. In this project, 1. We aim to isolate lactic acid bacteria capable to produce folate and I or riboflavin from goat milk and other artisanal dairy products, from Brazil and Argentina; 2. Caracterize and assess their potential application in production with food bioenriched with these vitamins; 3. Develop new products with high added value, using the vitamins producing strains.
