Abstract

Listeria monocytogenes is a Gram-positive bacterium with a broad spectrum of virulence and pathogenicity. It is often associated with foodborne diseases outbreaks, has the ability to proliferate under different environmental conditions, and to attach and form biofilms. Several studies indicate the influence of other bacteria in the development of L. monocytogenes in foods and in the environment. However, it is unclear how this interaction occurs, especially on the formation of biofilms. One hypothesis that can be raised is the occurrence of the mechanism of quorum sensing. Therefore, the aim of the present study is to evaluate the relation between E. coli and L. monocytogenes in biofilm formation, evaluating the production of autoinducer molecules responsible for quorum sensing mechanism. A wild strain of L. monocytogenes serotype 1/2a and its isogenic mutant (”pfrA and ”sigB), and E. coli strains will be used. The experiments will be performed using stainless-steel coupons and two different culture media, brain heart infusion broth and reconstituted fat milk, simulating the food industry environment. The presence of signaling molecules will be evaluated using biosensor strains. Data derived from this study will help in the control of this pathogen. (AU)
