Abstract

The objective of this research proposal is to develop a low cost and efficient filter to control the content of metal ions in sugarcane spirits, which are monitored and limited by the current legislation, without influencing the concentration of desirable volatile compounds present in the beverage. And without changing the sensory characteristics of the product. Currently, the most widely used and affordable filters in the market change the sensory profile of the drink. (AU)
