Abstract
Betalains are chromoalkaloids found in plants and fungi that have been used as drugs, redox mediators, antioxidants and safe dyes. In this research project, we propose to: i) optimize the biotechnological production of betalamic acid, the biosynthetic precursor of betalains, ii) produce betalains anti-inflammatories that act at the level of NF-ºB and COX-1/COX-2, iii) develop betalamic rotaxanes that self-assemble in aqueous media, iv) include data on natural betalains in the PhotochemCAD database by invitation of its development group, and v) understand the behavior of electronically excited betalains by employing ultra-fast spectroscopy.
